Ingredients
• 1 cup cornmeal
• 1 tsp. paprika
• 1/2 tsp. onion powder
• 1/2 tsp. garlic powder
• 1/4 tsp. cayenne pepper, or to taste
• 1 cup milk
• 2 eggs, beaten
• 6 (4 oz.) fillets catfish
• 2 tbsps. vegetable oil
Direction
• In a plate, mix garlic powder, paprika, cayenne pepper, onion powder, and
cornmeal together.
• Beat together eggs and milk in a bowl. Dip catfish fillets in milk mixture,
then coat both sides of fillets with cornmeal mixture by gently pressing it in
the mixture. Shake to remove excess breading.
• In a large skillet, heat vegetable oil; pan-fry catfish for about 4 minutes per
side in hot oil until the fish easily flakes with a fork and turns golden brown.
