Ingredients
• 24 large clams in shell, scrubbed
• 1 green bell pepper
• 1 red bell pepper
• 1 small red onion
• 1/4 cup Italian-style dry bread crumbs
• 2 cloves garlic, peeled
• 1 tsp. sea salt
• 1 tsp. freshly ground black pepper
• 1 tsp. dried oregano, crushed
• 1 tbsp. butter
• 4 slices bacon, cut into 1 inch pieces
Direction
• Shuck clams out of shell. Wash shells thoroughly. Arrange each clam onto a
clean 1/2 shell; put aside.
• Set broiler for medium heat and preheat.
• Mix together butter, oregano, pepper, sea salt, garlic, bread crumbs, red
onion, green and red pepper in a food processor or blender. Blend until the
mixture turns into a mush, but not watery.
• Top each clam with a tsp. of mixture, and place one 1-inch piece of bacon
on top.
• Arrange the clams on a broiler pan and position under the broiler about 4
inches from the heat. Broil for 8 to 12 minutes or until the bacon is crisp as
desired.
