Ingredients
• 2 tbsps. cooking oil
• 1 onion, chopped
• 2 cloves garlic, crushed
• 4 (4 oz.) catfish fillets
• salt and pepper to taste
• 1 1/2 cups coconut milk
Direction
• In a skillet set on medium heat, add oil. Stir and cook the garlic and onion in
the hot oil for 7-10 minutes until the garlic turns lightly browned and the
onion is glossy. Add in the catfish; add pepper and salt to taste. Cook for 2
minutes, covered. Stir in the coconut milk; cook for approximately 10
minutes, covered, until the coconut milk looks oily.
