Ingredients
• 5 lemons, juiced
• 1 tbsp. sea salt
• 3 large cloves garlic, minced
• 2 (8 oz.) fillets catfish
• 2 tbsps. lemon pepper seasoning (such as McCormick®)
• 2 tbsps. garlic and herb seasoning blend (such as Mrs. Dash®)
• 1 1/2 tsps. Creole seasoning (such as Tony Chachere's®) (optional)
• 1 lemon, thinly sliced
• 1/4 cup shredded carrot
• 2 tbsps. chopped fresh parsley
• 1 lemon, quartered
Direction
• Place juice from 5 lemons in a glass mixing bowl; stir in garlic and sea salt.
Put in catfish fillets; cover and marinate for 1 to 4 hours in the fridge.
• Turn the oven broilers to 400°F (205°C) to preheat; position the oven rack
to the lowest level.
• Take catfish out of the marinade, dripping off excess; pour off the rest of
the marinade. Arrange fish fillets on a broiling pan; season with Creole
seasoning, herb seasoning, garlic, and lemon pepper seasoning. Top fish with
lemon slices.
• Broil fish for 12 to 15 minutes in the preheated oven until fork tender. If
you want the edges of the fish darkened, turn the broiler on highest heat for
the last couple of minutes. Scatter top of fish fillets with parsley and shredded
carrot to garnish. Serve fish with lemon wedges.
