Ingredients
• 2 (8 oz.) frozen lobster tails, rinsed
• 2/3 cup Champagne
• 2 green onions, minced
• 1/4 tsp. salt
• 1/4 cup heavy whipping cream
• 1/4 stick unsalted butter, cut into tbsps.
Direction
• In a frying pan, mix together salt, green onions, champagne, and lobster
tails. Boil it. Lower the heat to medium-low, put a cover on the frying pan,
and simmer for 15 minutes until lobster is heated through. Move the lobster
to a dish.
• In the frying pan, mix cream in champagne sauce. Boil it and cook for 5-10
minutes until there is about 1/3 cup of the sauce left.
• Mix butter into the champagne sauce, 1 tbsp. each time until the sauce is
creamy. Put a cover on the frying pan and take away from heat.
• Separate the lobster’s tails from the shells and cut into medallions. Put the
champagne sauce on the lobster medallions.
