marinade when I cook for us only. When there are some guests, we
serve this as the main dish with melted butter for dipping in hot
ramekins, toasted bread, a simple green salad with a light dressing
and a bottle of cold Chardonnay."

Ingredients
• 1/4 cup butter
• 2 tsps. lemon juice
• 1 tbsp. grated orange zest
• 1/8 tsp. ground ginger
• 1/8 tsp. chili powder
• 1/8 tsp. aromatic bitters
• 4 (6 oz.) lobster tails
Direction
• Start preheating an outdoor grill over medium heat and coat the grate with a
light layer of oil.
• In a pan, melt the butter over medium heat, mix in the bitters, chili powder,
ginger, orange zest and lemon juice. Let simmer gently for 2 minutes and set
aside. Remove the membrane on the underside of the lobster tails; thrust each
lobster with a metal skewer to keep the lobsters from curling up while being
cooked.
• Grill the lobster tails with shell-side up for 10 minutes on the preheated
grill, flip the tails over and spread the butter sauce over the meat. Keep
grilling for another 10 minutes until the meat turns opaque in the center.
