Ingredients
• 2 lbs. catfish fillets, cut into 1 1/2-inch pieces
• 2 tbsps. dried thyme leaves
• 1 cup spicy brown mustard
• 1 quart vegetable oil for frying
• 2 cups all-purpose flour
• 1 tsp. salt
• 1 tsp. black pepper
• 1 tsp. baking soda
Direction
• Put the catfish pieces in a mixing bowl and add some thyme leaves. Mix
until the catfish pieces are evenly coated with the thyme. Use your hands to
mix in the mustard. Refrigerate with a cover overnight, up to 24 hours.
• In a large saucepan or deep-fryer, heat oil to 350 0 F (175 0C). In a mixing
bowl, combine baking soda, black pepper, salt and the flour together.
• Dredge the catfish pieces, each piece at a time, into the flour mixture and
shake to get rid of the excess. Working in batches, fry the catfish nuggets for
3 to 4 minutes until the center is no longer translucent and are golden brown.
Let the oil return to temperature between batches. Drain the nuggets on a
plate lined with paper towel before serving.
