summer!"

Ingredients
• 4 (4 oz.) fillets catfish
• 2 cups buttermilk
• 1 cup yellow cornmeal
• 1/2 tbsp. onion salt
• 1 tbsp. steak seasoning
• 1/4 cup vegetable oil
Direction
• Put catfish fillets in buttermilk in a medium bowl. Marinate with a cover in
the refrigerator for 45 minutes.
• Combine steak seasoning, onion salt and cornmeal in a resealable plastic
bag. Drain each catfish fillet separately and put in the bag to coat the fillet
with the cornmeal mixture.
• In a large, heavy skillet, heat oil on medium heat. Fry each catfish fillet 7-
10 minutes on each side, or until the outside is slightly browned and the flesh
can be flaked easily with a fork. Drain the fillets on paper towels.
