Ingredients
• 6 razor clams, cleaned and dried
• 2 eggs
• 1 cup all-purpose flour
• salt to taste
• black pepper to taste
• garlic powder to taste
• 1 cup panko (Japanese bread crumbs)
• 1/4 cup shredded Parmesan cheese
• 1/3 cup vegetable oil for frying
Direction
• Put a sheet of wax paper on a flat cookie sheet. The cookie sheet must be
able to fit in the freezer. Set pan aside.
• In a bowl, beat eggs. In another bowl, mix garlic powder, pepper, salt and
flour. In a third bowl, combine Parmesan cheese and panko. Coat clams with
flour then shake off the excess. Plunge clams in eggs then dip in panko
mixture, press to evenly coat clams with mixture. Put clams on the cookie
sheet then put wax paper over to cover. Put inside the freezer until firm.
• Take a skillet and heat oil on medium high heat. Fry the clams for a minute
per side until they become light brown. Be careful not to overcook because
clams will get tough. Once cooked, drain excess oil with paper towels.
