Ingredients
• 4 eggs
• 1 tbsp. hot pepper sauce (such as Tabasco®)
• salt and ground black pepper to taste
• 2 cups panko bread crumbs
• 1 1/2 tsps. dried tarragon
• 2 cups all-purpose flour
• 8 razor clams, cleaned and dried
• 2 tbsps. butter
Direction
• In a bowl, beat pepper, salt, hot pepper sauce and eggs together. In another
bowl, combine tarragon and panko. Put flour into a different bowl. Dredge a
razor clam into the egg, coat with flour, back to the egg mixture and press in
panko in the final step. Carefully toss between your hands to remove excess
breading. Bring breaded clams into a plate and repeat with the remainders; do
not place clams over each other.
• In a skillet, heat butter on medium-high. Fry clams for about 60 seconds per
side until browned a little. Make sure to not overcook, or else the clams will
be too hard. Serve at once.
